Ingredients:
- 1 pound of ground beef
- 1/2 of a chopped onion (medium size)
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
- 2 teaspoons of chili powder
- 1 teaspoon of cumin
- 1/2 teaspoon of cayenne
- 1 tablespoon minced garlic
- Flour tortillas - we use the medium ones
- 1 can of refried beans
- Taco Sauce (Taco Bell Mild sauce)
- 2 cups of shredded Colby Jack Cheese
- Diced tomatoes for garnish
- Chopped green onions for garnish
- Vegetable oil
Directions:
- Brown the ground beef in a large skillet over medium heat with chopped onion. Once beef is fully cooked drain any extra grease.
- Season with salt, pepper, chili powder, cumin and cayenne. Add Minced garlic and stir.
- While the beef is cooking, lightly fry flour tortillas in a seperate skillet over medium heat. Add just enough vegetable oil to cover the bottom of the skillet. Fry tortillas on both
sides until golden brown (this usually only takes 1-2 minutes on each side depending on how high the heat is). Once tortillas are fried place them on paper towels to absorb any extra
grease.
- Heat up refried beans to make them easier to work with. Spread refried beans on top of flour tortillas. Add a scoop of ground beef. Add a little bit of shredded cheese and
another fried tortilla. Spoon some taco sauce on top of the tortilla and top with more shredded cheese.
- Bake at 400 degrees for about 10 minutes. Top with diced tomatoes and chopped green onions.
