Krispie Peanut Butter Balls


  • 1 cup of creamy peanut butter
  • 1 cup of powdered sugar
  • 1/4 cup of unsalted butter, melted.
  • 2 cups of Rice Krispies cereal
  • 1 cup of semi-sweet chocolate chips
  • 1 tablespoon of cocnut oil (optional, for smoother chocolate)


  1. In a large mixing bowl, combine peanut butter, powdered sugar and melted butter - mix until smooth and well blended.
  2. Gently fold in the Rice Krispies cereal until evenly coated with the peanut butter mixture. (refrigerate for 20 to 30 minutes to firm up the mixture before rolling into balls)
  3. Roll the mixture into small balls (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper.
  4. In a microwave-safe bowl, melt the chocolate chips with the coconut oil in 30 second intervals, stirring between each, until smooth.
  5. Dip each peanut butter ball into the melted chocolate, making sure it's fully coated.  Return the chocolate-coated balls to the parchment paper.
  6. Allow the chocolate to set completely before serving.  You can speed up this process by placing the tray in the refrigerator for about 20-30 minutes.


  • Store the peanut butter balls in an airtight container in the refrigerator for up to a week.
