Baked Sweet Potato


  • 4 Medium Sweet Potatoes
  • 1 tbs olive oil
  • 4 tbs butter
  • 4 tbs brown sugar
  • 3 tsps ground cinnamon



  1. Preheat oven to 425F. Wash and light scrub potatoes. Drizzle with olive oil and rub oil all over skin. Place on a baking sheet and bake for 45-55 minutes or until fork pierces through the potato easily.
  2. Meanwhile, combine butter, sugar, and cinnamon in a small bowl. Return to refrigerator until potatoes are ready to serve.
  3. Remove from oven and let cool slightly before splitting open to serve. Top with a tablespoon of sweet cinnamon butter.
