Sweet Potato Casserole

Ingredients:

  • 4 Large Sweet Potatoes (baked at 400 for 45 to 60 minutes)
  • 3 cups cooked and mashed sweet potatoes
  • 2 eggs well beaten
  • 3/4 cup of sugar
  • 1/2 cup of butter (melted)
  • 1 teaspoon of Vanilla
  • 1/3 cup of milk

Topping:

  • 1/2 cup of brown sugar
  • 1/2 cup of chopped pecans
  • 1/4 cup of flour
  • 2 1/2 tablespoons of melted butter

Combine all the ingredients and mix well.  Sprinkle on top of casserolebefore baking.

 

Directions:

  1. Combine sweet potatoes, sugar, butter, eggs, vanilla and milk in a bowl.  Mix well with a mixer.  Pour into a casserole dish and cover with toppings.
